This recipe is endlessly adaptable. There are a few fixed ingredients and some that may vary with seasonal changes and differing tastes. I thought I would post it because it can be adapted to any metabolic balance® meal plan.
Where amounts are given, they are for 6 servings.
PREPARE
Allow at least 1 cup of vegetables per person. Cut them all in diagonal shapes. Cut the onion into wedges. If a vegetable doesn’t lend itself to the diagonal cut (cabbage, for example), dice or cut into square pieces.
HEAT
Heat the oil in heavy saucepan or wok. Saute the onion, green pepper, ginger, and celery over medium heat for 5 minutes.
ADD
Add each of the longer-cooking vegetables in turn. Saute for a few minutes between additions and stir occasionally.
Add some stock, put faster-cooking vegetables and leafy greens over other vegetables, and place cubes of tofu over this. Cover all and steam about 10 minutes until vegetables are just tender. Gently stir in bean sprouts if desired. (Allow sprouted soybeans to cook a full 5 minutes.).
Add soy sauce or salt to taste. Sprinkle with coarsely ground sesame seeds and serve right away, with a steaming hot bowl of brown rice. (Soy sauce, rice, sesame seeds would be acceptable in metabolic balance® Phases 3 & 4.)
THE MUSTS
- 1 onion, preferably red
- celery
- green pepper
- 1/4 cup oil
- 1 teaspoon chopped fresh ginger root
- 1/5 cup vegetable stock or water
- tofu, rinsed
- soy sauce OR salt to taste
THE VARIABLES
- green beans carrots
- broccoli
- cauliflower
- zucchini
- snow peas
- mushrooms
- bok choy or chard
- Chinese or Western cabbage
- peas
- bean sprouts
- coarsely ground sesame seeds
FURTHER VARIATIONS
Substitute the tofu for a protein mushroom, such as Portabella or shiitake. Use wild rice instead of white or brown rice. Here is another shiitake recipe.
