When I first reviewed my metabolic balance® meal plan I was surprised to see the words “seed mix,” a combination of raw pumpkin & sunflower seeds, as one of my breakfast choices. I thought, “What is this? Bird food? How can seed mix hold my hunger for five hours until lunch?” At first it did not. I dreaded the day that seed mix was my breakfast. I had to eat what I thought were the most filling vegetables and fruit on my list with the seed mix. Why pumpkin seeds are good for us, Pumpkin Seeds, A Healthy Choice.
One day, not too many weeks after I started the program, I realized seed mix was a wonderful breakfast. It gave me sustaining energy that the other breakfasts on my meal plan did not quite provide. When that day happened I began to experiment with different ways to prepare the seed mix that brought me culinary delight. Summer Italian Style Seed Mix is currently my favorite invention.
RECIPE FOR SUMMER ITALIAN STYLE SEED MIX
Prepare
– Soak seeds in water over night, drain and rinse before use.
– Reserve a few unsoaked seeds to toast, they will add a nutty flavor.
Chop Vegetables*
– Sun Ripened Tomato (An heirloom yellow tomato was used here.)
– Green Onion
– Green Olives
Toss
-Toss vegetables together with seed mix and herbs. My favorites are fresh basil, oregano, rosemary, sea salt to taste.
Arrange & Heat
-Arrange on rye crackers in a shallow pan. One may choose to use leaves of romaine lettuce or endive. Drizzle with extra virgin olive oil. Set in an oven preheated to 350°until the chill leaves the tomato. Enjoy.
*Remember, always start your meal with a bite of seed mix, this is your protein. Use the quantities and vegetables specified for individual meal plan. Olive oil is suitable for anyone not in the first 16 days of their program.
FINDING SATIETY
Satiety, that quality or state of being full is not just about fullness from being fed. It is about feeling gratified to, or beyond one’s capacity. That feeling of gratification comes from the fullness of many places of our lives–family, home, moments we have doing our favorite things. At any moment we can feel we are lacking something and then one thing happens, like we see a baby laughing, and our feeling of lacking is suspended and we can feel a state of satiety.
