Cheesy Italian Bake

Cheesey Italian BakeWhipping up a delicious, satisfying meal just takes a little time and some creativity. Cheesy Italian Bake is a simple, versatile, and satisfying recipe that can be adapted to any metabolic balance® plan. No reason you can’t serve this one to your family and guests.

VEGETABLES
Select enough vegetables for your meal. These vegetables should lend themselves to baking. Including but not limited to any Italian-type vegetable there is on your plan.

I have used tomato, zucchini. eggplant, green olives, the white part (root) of the green onion. I chose a Chinese variety eggplant as they tend to be smaller than the Italian.

Other vegetables suitable for this recipe are pumpkin, pepperoncini, peppers of any color of variety, king oyster mushrooms, celery, celery root, parsley, endive, cabbage, cauliflower, broccoli, spinach, kale, fennel bulb, leeks, spring onion, artichoke hearts, dandelion greens, etc.

CHEESE
I have used sheep feta, enough for my serving. Any kind of cheese can be used, such as buffalo mozzarella, American mozzarella, goat cheese log, cottage cheese, ricotta cheese, quark, jack, and pepper jack cheese. For variety, omit the cheese and use mushrooms or perhaps prepared legumes from your protein list. For example, chickpeas would be wonderful with this.

PREPARE

Preheat oven to 350oF.

Wash and chop vegetables.

Melt ghee or coconut oil in the bottom of a small baking dish. If you are in the Strict Phase (Phase 2 without oil), omit the ghee or coconut oil and add 1/8 cup. or water.

Line pan with 3/4 of the chopped vegetables and spread evenly with crumbles of cheese. Add fresh or dried herbs and spices to taste. I have used spicy oregano, rosemary, sea salt, and black pepper. One may consider cumin, cayenne, chili powder, sage, basil, paprika, thyme, sage, nutmeg, etc. For variation, sprinkle chopped rolled rye or rye cracker crumbs over the top. The pan can be lined with crumbs as well.

COOK

Place uncovered in the oven.

Bake for 30 minutes at 350.

Check in 20 minutes, if it is too dry, cover with foil for the last 10 minutes.

Remove, uncover, allow to stand 10 minutes before serving.
