Oven Roasted Button Mushrooms with Fresh Mozzarella and Basil

Jackie Forrester shared one of her favorite recipes that I thought you might enjoy: Oven Roasted Button Mushrooms with Fresh Mozzarella and Basil on a Rye Crisp\! It’s a versatile dish that works well for breakfast, lunch, or dinner.

Here’s what you’ll need:

* Fresh mozzarella cheese (1 portion vegetable)
* Button mushrooms (1 portion protein)
* Fresh basil leaves (to taste)
* Flaxseed oil TBS (optional, leave out for Phase 2 without oil)

And here’s how to make it:

1. Roast the mushrooms with basil in the oven.
2. Arrange them on a rye crisp with fresh mozzarella cheese and basil leaves.
3. Return to the oven until the cheese is melted.
4. Drizzle with flaxseed oil before serving.
