Many people on metabolic balance have goat cheese or chèvre on their metabolic balance® meal plan. It is a soft white cheese made from goat’s milk that resembles cream cheese and usually comes packaged as a log.
I ran across this simple but elegant recipe that can be adapted to anyone’s menu and customized to suit any pallet. Buffalo mozzarella may be substituted.
Use a gorgeous glass jar to set any table or even for gift-giving.
BEGIN
- Cut an 8-unce goat cheese log into 4 equal pieces; form balls.
- Pack all 4 balls into a sterilized wide-neck jar.
- Cut 1 red chile in half, through the stalk.
- 2 strips of zest from 1 lemon. If lemon is on your plan, if not, look another citrus, or a stalk of lemon grass or a dash of your favorite vinegar.
- Add chili, lemon zest to the jar.
PLUS
- 2 bay leaves
- 1 sprig of fresh oregano,
- 1/2 teaspoon of fennel seeds,
- 1/2 teaspoon of fennel seeds,
- 2 dried peppercorns (black, white, pink, or orange)
- 2 cloves of garlic, halved, into the jar.
POUR
- 2 cups of extra-virgin olive oil, enough to cover the cheese.
CHILL
- Cover the jar, refrigerate about 4 hours before servingYUM!
