Latkes

This is a traditional recipe for latkes (potato pancakes) which has been adapted to work with the therapeutic food combining guidelines for gemmotherapy programs. Using substitutions for white potatoes make this recipe a great accompaniment to meat! Summited by reader.

I use the large holes on the grater and usually leave the skins on when I am using white potatoes. White potato tastes best fried in butter vs olive oil, but I haven’t tried cooking them in coconut oil or duck/goose fat. The sweet potato tasted great sauteed in coconut oil. Since I don’t keep bread crumbs or wheat germ in the house I will take my fine grater/rasp and make the bread crumbs from the wheatless bread I have at home. The white potato gives off lots of water, but I just keep mixing it.

Enjoy!
